I have a confession to make. I'm obsessed with Thanksgiving food! If I could figure out a way to make a full Thanksgiving meal once a month, I would. While I don't make full Thanksgiving meals monthly, we do serve a full turkey or turkey breast pretty regularly.

How To Make the Turkey Sandwich with Cranberry and Brie

Start by preheating your air fryer to 350 F.
Spread butter onto one side of each slice of bread.
For each sandwich, you'll want to spread cranberry sauce onto one slice of bread on the non-buttered side.

Next, spread Brie onto the second slice of bread. If you've never eaten brie, it has a weird outer layer. I like to cut the weird outer layer off (some people eat it) and use the cheese below it to spread on the sandwiches.

Now place slices of turkey {or leftover turkey} on top of the brie.

Next, you'll want to put your sandwiches together, with the buttered sides on the outside.

Place your sandwich in the air fryer and cook for 5-8 minutes or until the sandwich is golden brown and crispy.

Do I have to use brie in this sandwich?
Nope. You can use any type of cheese you want as long as you choose one that melts well. I'm partial to gooey melted brie, but white cheddar is pretty darn good too. Some people like Havarti or Swiss, but I feel like their flavors are overwhelming in this recipe.
What is the best bread to use for this turkey cranberry brie sandwich?
I would use whatever bread you prefer. I like a good honey wheat, honey oat, or multigrain bread, but you can use whatever type of bread you prefer. Some people like a dense bread with a lot of seeds and grains and feel like they make the best air fryer sandwiches. Others prefer ciabatta or sourdough for a sandwich. You can opt for white bread, but it won't add much flavor to the sandwich. The nice thing about making this in the air fryer is that even if you don't use the best bread, you'll still end up with crisp buttery bread that is absolutely delicious!
Should I use homemade cranberry sauce or store-bought cranberry sauce?
You can use either one. Some people prefer this sandwich with a sweet cranberry sauce while others may prefer tart cranberries and tart cranberry sauce. Some prefer a smooth sauce while others prefer more of a cranberry chutney texture. If you opt for homemade cranberry sauce, you can change up the flavor profile to make the sandwich exactly the way you want.
Can I add other ingredients to this turkey brie sandwich recipe?
Of course. Feel free to add whatever extra ingredients you have from your holiday leftovers. You can add mashed potatoes, stuffing, or anything else you have leftover…other than pumpkin pie. 😉
You can also add fresh spinach. It will get deliciously wilted and combine well with the creamy brie cheese. I know some people like to add sage leaves, but I think the flavor is a little too strong.
Do I have to use butter on the outside of each sandwich?
Nope, but it's the perfect way to add lots of buttery goodness to your sandwich. My other go-to for this sandwich is mayonnaise. Even if you don't like mayo, you'll find this is a great way to end up with a crispy flavorful outside.
Can you make this sandwich without an air fryer?
While you may not get the same crispy outside and melted inside without an air fryer, you can still enjoy a delicious sandwich if you make it in a hot skillet or a panini press. I've always loved a good panini and turkey paninis are some of my favorite, so if you don't have an air fryer and have to choose between a skillet or panini press, go for the panini!
What do you serve with this air fryer turkey sandwich?
You can serve it with traditional thanksgiving dinner sides or you can serve it with fries, chips, or a more traditional “sandwich side”. You'll also want to serve something like Oreo Turkeys, Turkey Brownies, or Turkey Graham Crackers for dessert!
