In a large mixing bowl, use an electric mixer to combine your peanut butter, egg, and sugar.

When it's fully mixed, place the peanut butter mixture in the fridge to chill for 30 minutes.

Next, take chilled dough and use a cookie scoop to scoop dough onto your parchment paper. {Check the FAQs for an easier way to do this and get the cookies into the air fryer.}

Use fork tines to press down on the center of the cookie so that it lays flat, pressing in first one direction then again in the opposite direction so that your fork marks make a crisscross pattern on the top of your cookies.
If your air fryer has a basket or a tray, line the air fryer basket or the air fryer tray with a piece of parchment paper. If your air fryer doesn't have a basket or tray, just line the bottom of your air fryer with parchment paper. Be sure to not have extra parchment paper running up the side of the air fryer or it will get caught by the air and fold over the cookies and make a mess.

While you may be tempted to put as many cookies as you can in your air fryer at one time, don't do it. Your cookies will need space for the air to circulate around them plus they'll spread out some as they bake. I have found that 4-6 cookies at a time seems to be the magic number.
Set your air fryer at 370 degrees and air fry your peanut butter cookies for 4 minutes. Once the 4 minutes is up, turn off your air fryer and let the cookie sit in the air fryer for another 4 minutes.
For best results, place on a cooling rack to allow them to continue to cool and set.
Repeat until you’ve used up all your cookie dough!
Serve this sweet treat with a tall glass of milk!

FAQs {Frequently Asked Questions}
When you bake cookies in the air fryer, you'll notice that the outside of the cookies will become nice and crispy while the inside of the cookie is softer and chewier than a traditional oven-baked peanut butter cookie.
The only downside to using an air fryer is that you can't make big batches of cookies in the air fryer. You have to cook a small amount at a time. But thankfully, since they bake so quickly, you can make lots of small batches of cookies.
Yes. Please do not skip this step. If you put room temperature cookie dough in the air fryer the cookies will get crumbly and will spread more than they would if you were baking them in the oven. When you chill the cookies, it will save you from making a big mess when you pull the cookies out of the
As I mentioned above, the cookies are crumblier (is that a word) when you cook them in an air fryer. When you leave them for 4 minutes, it helps the cookies set up and stay together.
Yes…I have found that it's easiest if you take a piece of parchment paper and line your air-fryer basket {or shape it to fit the inside of your air fryer if you don't have a basket}. Then pull it back out and make your cookies on that parchment paper before dropping the parchment paper back into the air fryer or air fryer basket.
It depends on the size of your air fryer. I have multiple air fryers, but this one allows me to make 4 or 5 cookies at a time. You want to make sure you have plenty of room for the hot air to circulate, plus your cookies will spread so make sure you don't place them too close together. Otherwise, your air fryer will just make one ginormous cookie.
Nope. Your cooking time and your rest time will remain the same, no matter how many cookies you make.
You can store your leftover cookies for up to a week in an airtight container.
You can also freeze your air fryer cookies in an air-tight container and they'll last for a month. You'll want to thaw them overnight in the fridge to defrost them.
Keep in mind that these cookies are best when you eat them fresh from the oven.
Stick with the Price Is Right Plan and go with the closest setting you can without going over. You don't want to use a higher setting, you want to go with the closest setting under 370.
Yes…and no. I recommend using parchment paper, but you could also try using a silicone baking mat. I have found that the air doesn't circulate as well when using the silicone baking mat (possibly because it's hard to find the size you need for your air fryer). But you definitely need to use something!
Air fryers have breathing holes in the bottom and if you don't use parchment paper or a silicone baking mat, your cookies might fall through the cracks. And let's be honest, no one wants to miss out on their cookies or have to clean up a mess.
Please don't use aluminum foil as the cookies will cook too quickly and may be totally uneven. My recommendation is to stick with parchment paper.
You don't have to use a cookie scoop, but this cookie dough is very sticky. Plus, you want your cookies to be the same size when you bake them. If you don't have a cookie scoop, use a spoon or make sure to spray your hands with cooking spray so your dough doesn't stick to your hands.
Yep. You can freeze your cookie dough for up to a month. I recommend flash freezing the cookies when they're already in a cookie shape rather than in a big ball of dough.
Place parchment paper or a silicone mat on a baking sheet and place individual size cookie scoops of dough on your cookie sheet. Use a fork to press your cookie flat and to make the crosshatch pattern on the top of your cookie. Freeze for 60 minutes then place cookie dough cookies in a freezer bag.
You can, but it changes the consistency of the cookie. If you're wanting that brown sugar taste, I recommend using half brown sugar and half white sugar.
You can, but you'll probably want to refrigerate the dough a little longer. I'm hoping to experiment with an air fryer chocolate chip cookies recipe in the next few days.
I don't recommend using natural peanut butter as the ingredients tend to separate and this can make for some seriously messy cookies.
You can, but your cookies make be extra crumbly since the creamy peanut butter helps to hold the cookies together.
Yes, you can add vanilla extract, but keep in mind that adding too much will not only change the flavor, but also the texture.

I eat keto 90% of the time, so I decided to experiment with these to see if I could make a keto peanut butter cookie the same way…and the answer is YES!!!
If you're looking for a low-carb peanut butter cookie, you can swap out the sugar in this recipe for Swerve Granular Sugar. It's a 1:1 sugar substitute and the cookies are soooo good!
I also experimented and used 1/2 cup of Swerve Granular Sugar and 1/4 cup of Swerve Brown Sugar and those cookies were amazing as well!
