Our family loves Mexican food! And while I always thought chicken fajitas were difficult to make, when I actually tried making them, I was pleasantly surprised. This chicken fajita skillet dinner is an easy meal that can be whipped up in no time.
This easy recipe is perfect those busy nights when you need a quick and tasty dinner solution. Our easy homemade fajita seasoning is sprinkled over chicken and veggies that are cooked to perfection in a cast iron skillet then served on warm tortillas. If you're feeling extra ambitious, I highly recommend making these homemade flour tortillas. They are seriously to-die-for!
Skillet Chicken Fajita Ingredients
- 3 Boneless Skinless Chicken Breasts
- 1 Yellow Onion
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 1 Orange Bell Pepper
- 1 Poblano Pepper
- 2 Tablespoons Fajita seasoning
- 2 Tablespoons Olive Oil (optional)
- 1 Tablespoon Lime Juice or a fresh lime (optional)
- Flour Tortillas or Corn Tortillas
How To Make Skillet Chicken Fajitas
Preheat a large cast iron skillet on medium-high heat then add olive oil. You can also use coconut oil or butter if you prefer.
Use 3/4 of your fajita seasoning to season the chicken, saving about a fourth of it for the vegetables. If you don't have any homemade fajita seasoning on hand, you can use homemade taco seasoning and throw in an extra teaspoon of garlic powder and onion powder or you can use store-bought fajita seasoning mix. You could also mix 3 teaspoons chili powder with 1 teaspoon each of granulated garlic, onion powder, smoked paprika, garlic, and salt.
Once chicken is seasoned, add it to your hot skillet.
Cook your chicken for about 5-7 minutes on each side or until the internal temp reaches 165 degrees.
While your chicken cooks, cut your onion and all of your peppers into slivers.
Once your chicken is cooked, remove the chicken from the pan.
Place your chopped veggies in the skillet and sprinkle them with the remaining seasoning.
Saute the veggies for about 10 minutes until they are caramelized, stirring or tossing occasionally.
While your veggies are cooking, slice the chicken into thin strips.
When your veggies are finished cooking, add the sliced chicken back into the skillet and mix thoroughly. If you want some extra yumminess to this chicken fajita recipe, add a tablespoon of lime juice or squeeze some fresh lime juice directly from a lime over the juicy chicken and veggies before removing them from the heat.
Serve with warm tortillas! While I think homemade tortillas are where it's at, feel free to use whatever tortillas you have on hand.
Our favorite toppings for fajitas are shredded cheese (our favorite is cotija, but you can use cheddar cheese), sour cream, guacamole, pico de gallo and fresh cilantro, but feel free to use whatever fajita toppings your family prefers.
What to Serve with Chicken Fajitas
On nights where we just want a quick and easy dinner, we serve fajitas by themselves. If I cook it all in one skillet, I put that sizzling skillet on a trivet on the table and we serve our fajitas from there.
If I cook it up in 2 skillets (see FAQs below), I usually dump the chicken and veggies from the skillets into a large bowl.
If you have people in your family who eat keto or a low carb diet, they can opt for chicken fajita salads instead and can eat their fajita chicken on lettuce.
If we're in the mood for a complete meal like our favorite Mexican restaurants serve, we go all out and make Mexican rice, refried beans and Mexican street corn. If you have dietary needs (like low carb, etc), feel free to serve this with cauliflower rice instead.
And if my family has been extra awesome, I'll whip up some homemade queso and serve it with tortilla chips as an appetizer.

No. While I personally prefer a cast iron skillet, you can use any large skillet.
You sure can. You can use this recipe to make steak fajitas, beef fajitas, or even shrimp fajitas if you prefer. Just swap out your protein of choice for the chicken in this recipe.
Yes…and no. While you don't want to undercook your chicken or veggies, you can opt to use 2 skillets instead of a single skillet. Throw 1 tablespoon oil in each skillet and use one skillet for cooking your chicken and one skillet for cooking your veggies.
Onions and peppers will shrink, so while it looks like a lot, it's really the perfect amount, however, if you prefer more onions and less peppers…or more peppers and less onions, you do you.
You'll want to store them in airtight container. If you're planning on storing them in the fridge, you can store them for up to 4 days. If you want to freeze them, I recommend placing your cooked chicken and veggies in the freezer on a cookie sheet for a few hours before dumping them into an airtight container. They'll keep in the freezer for up to 2 months if they're stored in airtight containers.
Pro Tips
Cut your meat and veggies into small bite size pieces. If you're using soft tortillas and your pieces of meat are too big, your fajitas will fall apart and make a mess. You DO NOT want this to happen!
