If you're looking for the ultimate in comfort food, you're going to love this easy Ritz Chicken Casserole Recipe. This recipe is super easy to make and can be whipped up in no time…especially if you opt to use leftover chicken or a rotisserie chicken.
I've shared before that one of my meal prep secret weapons is purchasing multiple rotisserie chickens at Costco each week. This ensures that I always have shredded chicken on hand that can be tossed into whatever recipe I'm in the mood for and I also use the bones to make bone broth because I've found that adding bone broth (or chicken broth) in place of water in savory recipes and casseroles add some seriously good flavor.
You're welcome to cook chicken breasts and shred them for this recipe, but I think it's super easy to just use a rotisserie chicken.
Once you're made this easy recipe, you'll see why this creamy chicken casserole quickly becomes a family favorite. The combination of buttery ritz crackers, tender chicken, cheddar cheese and a creamy sauce makes this easy dinner a winner on busy nights.
