It’s no secret that I love donuts! And while I love a good bakery donut, there’s something about homemade donuts that gets me every time!
Donuts are surprisingly easy to make and they’re always a huge hit! These Peppermint Mocha Donuts are perfect for Christmas morning…but we won’t tell if you eat them all year long!
Peppermint Mocha Donut Ingredients
- 3/4 cup all-purpose flour
- 1/3 cup cocoa powder
- 4 teaspoons instant espresso powder
- 1-teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup granulated sugar
- 1 tablespoon brown sugar
- ¼ cup Greek yogurt or sour cream
- ¼ cup plus 2 tbsp. milk
- 1 egg
- 1 tsp. vanilla extract
- 1 tablespoon unsalted butter (melted and slightly cooled)
Peppermint Glaze:
- ¾ cups chocolate chips (You can use milk chocolate or semi-sweet, but I prefer milk chocolate for this)
- ¼ tsp. peppermint extract
- 2 tbsp. crushed peppermint candies or candy canes
How To Make Homemade Peppermint Mocha Donuts
Preheat oven to 350 degrees F. Coat a donut pan with nonstick cooking spray. These are my favorite donut pans.
In a small bowl, whisk together yogurt, egg, milk and vanilla until smooth. Add in the melted butter once slightly cooled.
In a large bowl, whisk together flour, espresso powder, cocoa powder, baking powder, baking soda, both sugars and salt.
Combine the wet ingredients into the dry and stir until fully combined.
Scoop the batter into a piping bag or a decorating tool. Pipe the batter into the wells of the prepared donut pan.
Bake for 9-10 minutes, until they are set and bounce back when gently pressed. Allow them to cool in the pan for 5 minutes. Then place on a metal cooling rack.
Prepare the Glaze
Add chocolate chips to a small bowl and microwave for 45 seconds. Cover the bowl and allow the chocolate to sit for 3 minutes. Uncover and stir, if not fully melted warm in increments of 20 seconds.
When chocolate is fully melted, slowly stir in Peppermint Extract.
Dip each donut in the glaze and place on the baking sheet.
Sprinkle with crushed peppermint candies. {You need to make sure to sprinkle the candy on the donuts before the chocolate glaze has time to harden. You may want to do one donut at a time to make sure this isn’t an issue}
