How To Make Chocolate-Strawberry Fudge
Place the red candy melts in a microwave-safe bowl and heat on high in the microwave for 30 seconds. Continue heating at medium heat or medium-low heat for another 1-2 minutes, stirring every 30 seconds. If you prefer not to use a microwave, you can use a double boiler to heat your chocolate melts.
Follow the directions above to heat the pink candy melts, but keep the two colors separated.
Remove the lid and film from the frosting and place the can of frosting in the microwave for 45 seconds to 1 minute, or until fully melted and smooth. If you're planning to use the heart sprinkles, set aside a tablespoon of uncooked frosting.
Add the strawberry extract to the melted frosting and stir well to make strawberry frosting.
Place half of the frosting in with the red candy melts.
Then pour the other half of the frosting in with the pink candy melts.
6. Stir each color vigorously until fully mixed.
Line your pan with parchment paper and make sure to leave some of your parchment paper hanging over the end.
Alternate pouring the two colors into the prepared pan randomly.
Make sure to tap the pan on the counter so you don't have any bubbles in your fudge mixture.
Once all your chocolate mixtures have been poured in and evened out, sprinkle the top of the fudge with as many Valentine’s themed non-pareils as you like.
Place in the fridge to chill for 2 hours or until hardened.
Cut your fudge into small squares (or if you're feeling extra creative, you can use cookie cutters to cut this delicious treat into heart shaped pieces).
If desired, use the set aside frosting and place a dab on the back of a heart sprinkle, and press it into the middle of each small piece you cut for a cute addition!
FAQ {Frequently Asked Questions}
If your fudge is hard or if it falls apart while you're cutting it, you used too much chocolate. The fudge will still taste good, it just won't be very pretty or soft. Make sure to reduce the amount of chocolate you use next time.
If your fudge won’t set up well, it means not enough chocolate was used. You either need to increase the chocolate used or decrease the amount of frosting the next time around.
Just keep stirring…and stirring…and stirring! This is totally normal. You'll just want to make sure the mixture is pourable.
NO!!! You know I usually say you can do whatever you want, but if you add the extract directly to the chocolate it will ruin it. The extract will cause the chocolate to seize up to a point that it's totally unusable.
Yep. You sure can. Feel free to use marshmallow fluff instead of the frosting.
Yep. You can just use regular pink candy melts instead. The extract adds plenty of strawberry flavor so you don't have to use the strawberry flavored melts if you don't want to.
If you don’t have access to candy melts, you can use white chocolate chips and color the chocolate with oil based food coloring. Do not use water based dye or it will ruin the chocolate…just like the extract does.
You can easily swap red and pink candy melts for dark green and light green candy melts. You can also add green shamrock sprinkles instead of hearts. Not feeling the strawberry flavor? Swap mint extract or vanilla extract for the strawberry extract. It's easy-peasy and the sky is the limit.
I recommend storing it in an airtight container at room temperature for no more than 3-5 days.
