What is Pico De Gallo?
Pico de gallo, also known as salsa fresca (fresh sauce or fresh salsa), salsa cruda (raw sauce or raw salsa) or salsa Mexicana, is a type of Mexican salsa made from fresh, chopped ingredients. It typically consists of fresh tomatoes, onions, jalapeno peppers, fresh lime juice, cilantro, and seasonings.
The name “pico de gallo” translates to beak of rooster or “rooster's beak” in English, possibly because the dish was traditionally eaten by pinching the ingredients together between the thumb and forefinger, resembling a pecking motion.
While you can purchase good pico de gallo at the store, I think it's worth the extra effort to make fresh pico de gallo. Homemade pico de gallo really is the best pico de gallo!
Easy Pico De Gallo Recipe
Pico De Gallo Ingredients:
- 5 Roma tomatoes
- ½ red onion
- 1 jalapeno pepper
- 1 lime, juiced
- 2 tbsp fresh cilantro, chopped
- ¼ tsp salt, or to taste
- ¼ tsp black pepper, or to taste
How to Make Homemade Pico De Gallo
Prepare the ingredients
Begin by washing the Roma tomatoes, red onion, jalapeno pepper, and cilantro under cool running water. This will ensure that any dirt or debris is removed from the produce before chopping.
Dice the tomatoes
While I feel like this should go without saying, I'm going to say it anyway. 🙂 Make sure you are using ripe tomatoes. Slice off the ends of each tomato, then cut them in half lengthwise. Remove the seeds and any excess liquid using a spoon or your fingers. This will prevent your pico de gallo from becoming too watery.
Next, cut the tomatoes into thin strips and then dice them into small, uniform pieces. Transfer the diced tomatoes to a medium-sized bowl and set aside.
Dice the onion
Cut off the ends of the red onion and peel away the outer layers. Slice the onion in half, then make thin, vertical cuts along the interior, followed by horizontal cuts to create small, evenly sized pieces.
Add the diced onion to the bowl with the tomatoes.
Chop the jalapeno
Wearing gloves to protect your skin from the spicy oils, slice off the stem end of the jalapeno pepper and cut it in half lengthwise. Remove the seeds and membranes for a milder heat, or leave them intact for a spicier pico de gallo.
Finely chop the jalapeno, then add it to the bowl with the tomatoes and onions.
Chop the cilantro
Remove any thick stems from the cilantro, then gather the leaves into a tight bunch. Using a sharp knife, finely chop the cilantro leaves. If you don't own a pair of herb scissors, consider investing in some. They make cutting herbs soooo easy!
Measure out 2 tablespoons of chopped cilantro and add it to the bowl.
Juice the lime
Cut the lime in half, and using a citrus juicer or your hands, squeeze the juice from both halves over the ingredients in the bowl, taking care to avoid adding any seeds.
Season and mix
Sprinkle ¼ teaspoon of salt and ¼ teaspoon of black pepper over the ingredients in the bowl, or adjust to taste. Gently mix everything together with a large spoon, ensuring that the lime juice, salt, and pepper are evenly distributed throughout the pico de gallo.
Let the flavors meld
Allow the pico de gallo to sit at room temperature for about 10-15 minutes before serving. This brief resting period will help the flavors meld together and create a more harmonious taste.
Serve and enjoy
Serve your freshly made pico de gallo with tortilla chips, or use it as a topping or side dish for your favorite Mexican meals. Enjoy the burst of fresh, zesty flavors that this homemade pico de gallo brings to your table!
FAQs {Frequently Asked Questions}
Yes, feel free to use your favorite type of tomato in this recipe. However, Roma tomatoes are recommended because they have a firmer texture and less water content, which helps prevent the pico de gallo from becoming too watery.
To control the heat, you can remove the seeds and membranes from the jalapeno pepper before chopping it. For a milder flavor, use half of the jalapeno or replace it with a milder pepper like a bell pepper or Anaheim pepper. Poblano peppers are also great for creating a flavorful pico de gallo without as much heat.
For more heat, use a spicier pepper like a serrano pepper or habanero pepper.
You can use whatever onions you want, but I prefer to use a red onion or a white onion for this recipe?
Yes. While I love “cheating” with frozen ingredients in many recipes, the fresher the ingredients, the better the pico.
Store any leftover pico de gallo in an airtight container in the refrigerator. Properly stored, it will last for up to 3-4 days. However, it's best to enjoy pico de gallo within a day or two of making it, as the fresh ingredients can become less crisp over time.
While it is possible to freeze pico de gallo, I don't recommend it due to the high water content of the fresh ingredients. Freezing and thawing can cause the tomatoes, onions, and jalapenos to become mushy and lose their texture. Instead, enjoy your pico de gallo fresh, or store it in the refrigerator as mentioned above.
Consider adding fresh fruits like mango or pineapple to give your pico a mango salsa or pineapple salsa vibe.
Pico de Gallo vs. Salsa: What's The Difference?
While both pico de gallo and traditional salsa share some ingredients, they have distinct differences in texture and flavor.
Pico de gallo features fresh, uncooked ingredients and has a chunkier texture, whereas traditional salsa is often cooked, blended, or pureed, resulting in a smoother, saucier consistency. Pico is also typically less spicy than salsa and is served chilled or at room temperature, while salsa can be served hot or cold.
