This recipe is made in the Instant Pot. I've been using my Instant Pot for a few years and it's been a game-changer for my family. It allows me to get dinner on the table in way less than time than it used to take. I also use my Instant Pot as a slow cooker, a rice cooker and more.
And while many people think they know how awesome their Instant Pot is, many people aren't using it for things like baking! I love that I can create something amazing and delicious without turning on my oven and heating up the kitchen!

Here's what you'll need to make this amazing Instant Pot Banana Bread.
For starters, you'll need a bundt pan or cake pan that will fit into the inner pot of your Instant Pot. While you can make this in a bundt pan or a cake pan, I love the way it looks when you cook it in a bundt pan. It's just so fancy! {And I like fancy!}
You'll also want to use either a trivet to go in the bottom of your Instant Pot to put your bundt pan on or you'll want to use a bakeware sling. Most Instant Pots come with a trivet, but I really like the ones that have handles that make it easy to lift out.
Ingredients:
- 3 ripe bananas
- ½ cup softened unsalted butter
- ½ cup brown sugar
- ½ cup white sugar
- 2 beaten eggs
- 1 tsp vanilla extract
- ¼ cup sour cream
- 2 cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ¼ tsp cinnamon
- Caramel and pecans for garnish
Directions For Making Banana Bread In Your Instant Pot
Using a fork, mash your ripened bananas in a small bowl.
In a 2nd mixing bowl, cream the butter and sugars with a handheld mixer.
Add the egg and vanilla and mix with a spoon until well mixed.
Add the bananas and sour cream into the butter/sugar mixture.
In a 3rd bowl, sift together the flour, baking powder, baking soda, salt and cinnamon.
Add the dry ingredients to the bowl with the wet ingredients and mix until everything is combined.
Grease your bundt pan (or cake pan) and spoon the mixture in evenly.
Cover with aluminum foil.
Add 1 ½ cups of water to the inner pot of your Instant Pot.
Place the pan into your bakeware sling or onto your trivet and lower into the inner pot of your Instant Pot.
Close the lid and set the vent to seal.
Press the Manual button on High Pressure and set the time to 50 minutes if you're using a bundt pan. If you're using a cake pan, set the time for 55 minutes instead.
After your Instant Pot is finished cooking and you hear it beep, allow it to release naturally for 15 minutes. After 15 minutes, release any remaining pressure.
After you've released the pressure, carefully remove the lid. It will be super hot and there may still be a lot of steam, so be careful! 🙂
Using oven mitts or a pair of heat-resistant gloves (I like these), remove the bundt pan or cake pan from your Instant Pot.
Carefully remove the foil and allow the banana bread cool for 10-15 minutes.
Once it has cooled, flip the pan onto a plate and garnish your banana bread with caramel and pecans.
You can serve this warm with ice cream (dessert-style) or you can store it in the fridge and eat it in traditional banana bread style.

Can I make this without nuts?
Of course! Sometimes if you try to skip the nuts that are included in a recipe, it can change the taste, texture or cooking time of the recipe. Since the pecans are a garnish, you can totally skip them without having to change anything else about the recipe.
I don't like pecans. Can I use a different type of nut?
I'm a nut snob and really prefer this with pecans, but you could probably use walnuts or almonds if you were in a pinch.
What kind of caramel do you recommend?
You can technically use any kind of caramel, but my first choice is homemade caramel or dulce de leche.
My 2nd choice is this amazing caramel sauce from DeBrand (my favorite chocolatier in the whole world).
If you don't want to bother making homemade caramel and you don't have time to wait for a jar of DeBrand Caramel Sauce to be delivered, you can use this caramel sauce. It's readily available in grocery stores or you can order from Amazon and keep it on hand for recipes like this.
Can I make this without caramel?
Yes, you can make this without caramel, but you won't have anything for the pecans to stick to. If you don't like caramel or don't have any handy, you could always make a powdered sugar and milk glaze to use instead.
Can I make this in a regular loaf pan?
If you have a loaf pan that is small enough to fit in your Instant Pot, you can make this in a regular loaf pan, but be sure not to fill the loaf pan more than 1/2 to 2/3 of the way full as it will rise significantly while cooking. This recipe will make 2-3 small loafs if using regular loaf pans.
