It's hard to believe that Thanksgiving has come and gone. And while most people make a turkey once or twice a year, at our house we make a turkey once or twice a month. It's an easy and economical way to make a whole lot of meat! And it's great to make when we entertain.
We use the leftover turkey for all kinds of recipes where we substitute the turkey for chicken. Here are a few of our faves:

And while all of these recipes are great, there's something about a big bowl of homemade turkey soup that is good for the soul! And in a year where the world has gone crazy and sickness seems to be on the rise, I thought I'd share this recipe that's a huge hit at our house.
Homemade Turkey Soup Ingredients

If you happen to have any corn, potatoes, or carrots leftover from Thanksgiving, feel free to use them instead of using canned corn, potatoes, and carrots.
- Turkey Carcass
- Left Over Turkey Meat
- 15oz Can Corn
- 15oz Can Potatoes
- 15oz Can Carrots
- 8oz Egg Noodles
- 1 Tablespoon Salt
- 1 Teaspoon Pepper
- 3-4 Quarts Water
How to Make Homemade Turkey Soup
Place your turkey carcass into a large pot. Make sure to add in the turkey neck, giblets, any skin, & leftover turkey drippings!
Add about 3-4 quarts of water to the pot or however much you need to submerge the carcass.

Add a tablespoon of salt and a teaspoon of pepper. If you're looking to make your broth more nutrition, add a teaspoon of apple cider vinegar. It will help to pull the collagen from the bones of your turkey and will leave you with a richer, more nutrient-dense broth.
Bring the pot to a boil over high heat.
Once boiling, turn the burner down to a low simmer.
Simmer for about 5 hours while checking every now & then. If your water is boiling off too quickly and the bones start to stick out of the water, add more water to cover it up and bring back to a simmer.
Pour the stock through a strainer into a large bowl catching any bones.
Pour boneless stock back into the large pot.
Add leftover turkey chunks, corn, potatoes & carrots.

Bring to a boil and then simmer for 45 minutes.
Add in egg noodles & then bring up to medium heat.
Once noodles have softened, serve & enjoy!
