- Boneless skinless chicken breast
- Rotel
- Chili beans
- Black beans
- Whole kernel corn
- Taco seasoning (You can use store bought taco seasoning or homemade taco seasoning)
- White onion
- Garlic
- Chicken broth
How To Make Instant Pot Chicken Taco Soup

Place your chicken and one cup of water into the instant pot.
Place the lid on the pot. Set the pressure valve to a sealed position.
Click manual or pressure cook and cook on high pressure for 35 minutes.
Once the chicken is done cooking, you can opt for a natural release or a quick release to release the pressure. Once the pressure is released, drain and shred your chicken. I think it's fastest to use a hand mixer or stand mixer to shred the chicken, but you can also use two forks to do it manually.
Once your chicken is shredded, add it back to the pot.
Next, add in the diced white onions and garlic and give a good stir.

Now add your drained corn, drained black beans and chili beans. Stir well.

Add chicken broth until you reach the fill line.
Add in extra water if needed.
Stir in the taco seasoning (you can either use a taco seasoning packet or 2 Tablespoons of homemade taco seasoning).
Set the pot to sauté mode or cook it on high.
Let it come to a boil and stir often.
Once it comes to a boil, turn it to keep warm to keep it warm while serving.
How Long Does It Take To Make Instant Pot Taco Soup?

Prepping takes no more than 10 minutes and that includes cutting the onion and garlic and getting all the other ingredients ready.
Cooking the chicken in the instant pot takes 35 minutes. Shredding only takes a minute or so.
Then add in all the other ingredients to a boil takes 2-4 minutes
Since the Instant Pot takes a little time to get heated up before cooking, I would plan on 60 minutes total. Give yourself another 10-15 minutes if you plan on using the natural release instead of quick release.
Can I Make Chicken Taco Soup in the Crockpot?
Yes! Place all of the ingredients in your crock pot or slow cooker. Set crockpot on low for 6-8 hours or high for 3-4 hours. Shred the chicken and return to the slow cooker before serving.

Just make sure to check the internal temperature is 165 degrees F before shredding.
Can I use something other than boneless skinless chicken breasts?
Yep. You sure can. You can use chicken thighs or chicken legs or whatever else you want to use. You'll just want to make sure that you remove the bones before adding the chicken meat back into your soup.
Want creamy chicken taco soup?
Add half a block of cream cheese after your soup has come to a boil and stir well. Not a fan of cream cheese? You can opt for sour cream instead to make a creamy soup.
Can I use frozen corn instead of canned corn?
