I've used our homemade cinnamon roll recipe for Christmas morning breakfast or if we had another special occasion like Mother's Day brunch or another holiday brunch. But this easy breakfast recipe is the perfect replacement.
It's super easy and is a regular at our house. It's perfect for a lazy Saturday morning…and it's equally amazing on busy Sunday mornings.
This delicious Cinnamon Roll Casserole is super easy to make and only requires 6 ingredients! You can throw it together in 5-10 minutes and once it's in the crock pot, you'll just need to cook it for 2 to 3 hours. Easy-peasy!

A Crock Pot Cinnamon Roll Casserole is a baked breakfast (or dessert) made using a slow cooker. If cinnamon rolls and a french toast bake had a baby, this would be the baby!
In this recipe, we use canned cinnamon rolls as the base for our tasty casserole!
Is this casserole hard to make?
Nope! It's one of the easiest recipes you'll find for a slow cooker. It's perfect for beginners who are looking to make an impressive meal for breakfast, brunch or dessert. We've even been known to have it for dinner with eggs from time to time as well.
Cinnamon Roll French Toast Casserole Ingredients

- 2 Cans Pillsbury Cinnamon Rolls (You can use another tube of cinnamon rolls, but I think these are the best)
- 4 Eggs
- 1/2 cup of Milk
- 1/4 cup of Maple Syrup
- 2 teaspoons Vanilla Extract
- 1 teaspoon Cinnamon
How To Make This Cinnamon Roll Casserole
Open your cans of cinnamon rolls. Make sure to save the icing as you'll need it!
Spray your crock pot with non-stick cooking spray. If you're using a traditional slow cooker instead of a multicooker like an Instant Pot, you may want to use a crock pot liner. You'll still want to spray the crock pot liner with cooking spray to keep your cinnamon roll pieces from sticking.
Place half of your cinnamon roll dough pieces in the bottom of your slow cooker.

In a small bowl, mix together your eggs, milk, maple syrup, vanilla and cinnamon.

Pour your egg mixture on top of your cinnamon roll pieces.

Put the other half of the cinnamon roll pieces on top of the egg mixture.

Drizzle with one packet of icing and cook for 2-3 hours until golden brown.

When your cinnamon rolls are cooked through, drizzle with the other container of icing and serve warm!

Alternative Way To Make This Cinnamon Roll Breakfast Casserole
I've heard some people complain that their cinnamon roll casserole came out eggy. If this happens to you, you may want to try making it this way instead.
Start by spraying your crock pot with cooking spray.
Cut up each of your cinnamon rolls into 4 pieces.

In a large bowl, use a whisk to mix together your eggs, milk, maple syrup, vanilla and cinnamon.
Place all of your cinnamon rolls in the bottom of your crock pot. Pour the egg mixture over the cinnamon rolls in the crock pot.
Use a mixing spoon to make sure the cinnamon rolls are evenly coated with the egg mixture.
Drizzle one of your containers of icing over the cinnamon rolls.
Put the lid on the crock pot and cook on low for 2-3 hours.
When your cinnamon rolls are cooked through, drizzle the top of the casserole with the remaining container of icing.
This is absolutely perfect served with a hot cup of coffee or a cold glass of milk.
