When it comes to making supper, I'm always looking for something that's really delicious…but also easy to make! That's why I'm attracted to meals like this One Pot Cajun Jambalaya recipe.

I love that, in less than 45 minutes, I can have this meal ready for my family. And I barely have to spend any time doing dishes.
One Pot Meals are delicious and easy to make, and they also have very few dishes I have to clean up afterwards! And since we're now home all the time, I feel like we're doing dishes a gazillion times a day.
I recommend serving it with some french bread on the side!
One Pot Cajun Jambalaya Ingredients
- 2 Tbsp olive oil
- 1 1/2 lb. chicken, diced
- 1 red bell pepper, diced
- 1 onion, diced
- 1 lb. smoked sausage, sliced into rounds
- 4 1/2 c. chicken broth
- 1 1/2 c. tomato sauce
- 1 can Rotel diced tomatoes with green chiles
- 1 Tbsp. Cajun seasoning
- 1 Tbsp. garlic powder
- 1 Tbsp. paprika
- 1 Tbsp. onion powder
- 1 Lb. linguini
- 1 Lb. cooked shrimp
Cajun Jambalaya Recipe
In a large pot, heat oil over medium heat.
Add chicken and cook until tender.
Add remaining ingredients except for shrimp.
Bring to a boil, stirring often and cook for about 25 minutes or until the noodles are cooked.
Add in the shrimp and cook until the shrimp is heated through. {Don't overcook at this point or the shrimp can become rubbery…and you do NOT want that!}
Voila! Dinner is served!
