It seems like everyone is allergic to something! My twins can’t have gluten or artificial coloring. One of my close friends is allergic to eggs and another friend has a dairy allergy! Unfortunately, it makes it tough to bring the right sweet treat to a get-together! Have no fear though! I have found the perfect recipe! It’s called Vanilla Crazy Cake and it can be made without eggs, milk, and butter and you can even use an all-purpose gluten free flour to make this gluten-free too!!!
Here’s what you’ll need:
• 1 1/2 Cups flour (all-purpose)
• 1 Cup sugar (All purpose sugar – Granulated Pure Cane Sugar)
• 1 tsp. baking soda
• 1/2 tsp. salt
• 1 tsp. white vinegar
• 1 ½ tsp. Pure vanilla extract
• 5 Tbsp. vegetable oil
• 1 Cup water
Make 3 depressions in dry ingredients – two small, one larger. Pour vinegar in one depression, vanilla in the other and the vegetable oil in third larger depression. Pour water over all and mix well until smooth.
Pour mixed ingredients into round pans
Bake on middle rack of oven for 35 minutes.
Check with toothpick to make sure it comes out clean.
Cool. Top with your favorite frosting. Enjoy!
Note: this can easily be made Gluten Free by simply using a Gluten Free All Purpose Flour
