Peppermint Cookie Dough Truffles: Easy Holiday Recipe

Ingredients
- 1/2 C unsalted sweet cream butter, softened
- 3/4 C brown sugar
- 1 1/4 C sweetened condensed milk
- 1 tsp peppermint extract
- 2 1/2 C flour
- 1/2 C mini nestle chocolate chips
- 1 C crushed candy cane
- 4 drops pink gel food coloring (optional)
- 1 bag of ghiradelli melting chocolate
Instructions
- In a stand mixer, cream together the butter and sugar
- Beat in the sweetened condensed milk and peppermint extract.
- Gradually add the flour until combined.
- Add a little bit of gel food color and mix well.
- Stir in the chocolate chips and candy cane pieces by hand.
- Place mixture into the fridge for about 8 hours.
- Using a small ice cream scoop, scoop some dough into your hands.
- Roll the dough and then place onto a cookie sheet fitted with a silicon mat or parchment paper
- Place into the freezer for 30 minutes.
- Using a double boiler, melt the Ghiradelli chocolate.
- Using a fork, dip a dough ball into the chocolate and fully coat it.
- Lightly tap the edge of the pot to get the excess chocolate off.
- Place onto the parchment paper.
- Repeat steps with remaining chocolate.
- Pour the leftover chocolate into a parchment bag
- Drizzle the chocolate over the dipped cookie truffles and then sprinkle with some crushed candy canes.
