While I typically think of cheesecake as a fabulous summer dessert and Pecan Pie as a Thanksgiving specialty, this recipe combines the best of both worlds…making it a dessert perfect for any time of year!

Pecan Pie Cheesecake Recipe
Here are the ingredients you'll need…broken down by which part of the recipe they'll go in.
Pecan Pie Cheesecake Crust:
- 1 3/4 cups Vanilla Wafer Crumbs
- 1/4 cup brown sugar (not packed)
- 1/3 cup unsalted sweet cream butter, melted
Pecan Pie Cheesecake Pecan Filling
- 1 cup sugar
- 2/3 cup dark corn syrup
- 1/3 cup unsalted sweet cream butter, melted
- 2 eggs
- 1 1/2 cups chopped pecans
- 1 tsp Vanilla extract
Pecan Pie Cheesecake Filling
- 24 ounces cream cheese, softened
- 1 1/4 cup brown sugar, unpacked
- 2 tbsp flour
- 4 large eggs
- 2/3 cups heavy whipping cream
- 1 teaspoon vanilla extract
Pecan Pie Cheesecake Pecan Topping
- 3 1/2 Tbsp unsalted sweet cream butter, melted
- 1/2 cup brown sugar, unpacked
- 1/8 tsp cinnamon
- 1/4 cup heavy whipping cream
- 1 cup Chopped Pecans
Whipped Cream
1 C heavy whipping cream
1 tsp vanilla extract
1/4 C powder sugar

Pecan Pie Cheesecake Crust Directions:

Line the bottom of a 9-inch springform pan with parchment paper. I used to do just stuff a piece of paper in the bottom and make do, but I found that by tracing the bottom of the springform pan onto the parchment paper, I could end up with a perfect circle of parchment paper. This will make your finished product look much better.
In a mdedium sized bowl, combine vanilla wafer crumbs and brown sugar. Stir in melted butter, then press the mixture evenly into bottom of the springform pan. I also like to push some of the crust mix halfway up the sides of the pan.
While you're making the filling, put the crust into the fridge to allow it to begin setting.
Pecan Pie Cheesecake Pecan Filling Directions:

In a medium saucepan combine sugar, corn syrup, melted butter, eggs, pecans and vanilla. Bring your mixture to a boil over medium to medium-high heat, stirring constantly. Don't let the temperature get too high and don't stop stirring or you'll have a burnt mess on your hands.
Reduce heat and allow it to simmer, stirring constantly until thickened, 5-7 minutes.

Pour into prepared crust and set aside.

Pecan Pie Cheesecake Filling Directions:
Preheat the oven to 350 degrees F.
Using a stand mixer, beat the cream cheese until creamy.
Add brown sugar and flour and beat until fluffy.

Add eggs, one at a time, beating just until combined after each addition.
Stir in heavy cream and vanilla, then pour cheesecake mixture over pecan filling.

Place your springform pan onto a cookie sheet then put it in the oven. Reduce the oven temperature to 325 degrees and bake for 55-70 minutes. You'll know it's time to move on to the next step when you insert a toothpick in the center and it comes out clean.
Turn off the oven and leave cheesecake in the oven with the door closed for 1 hour.
Run a knife around edges of cheesecake but don’t take out of the pan until completely cooled.
Pecan Pie Cheesecake Topping Directions:
In a small saucepan combine butter and brown sugar.
Cook for 3-5 min or until very bubbly. Then stir in cinnamon, heavy whipping cream and chopped pecans.
Allow it to cool to room temperature.
Release the sides of springform pan and spoon the topping over cooled cheesecake.
Whipped Cream Topping Directions
I'm including instructions for making whipped cream topping using a stand mixer, but wanted to share another option first. I bought one of these whipped cream makers when I switched to eating keto so I could make my own whipped cream for my daily cup of hot chocolate. This may be my favorite item in my whole kitchen! I love that I can add whatever ingredients I want to my whipped cream. Ok…now back to making whipped cream if you don't have a handy-dandy whipped cream maker.
Using a stand mixer or a hand mixer, combine the heavy whipping cream, vanilla and powder sugar and mix on medium speed until stiff peaks form.
Scoop whipped cream into the piping bag and pipe around the edge of the cheesecake
Sprinkle with pecans.
Store the cheesecake in the fridge until ready to serve.
