I'm a huge fan of Dr. Seuss. What's not to love about a guy who writes poetry about red fish and blue fish and cats wearing hats? In honor of his upcoming birthday on March 2nd, I thought I'd share this Dr. Seuss Cupcakes recipe with you!

I've broken down this recipe into sections and have separated the ingredients out for each section: cupcakes, frosting, chocolate-covered Oreos, and dipped marshmallows and have also included directions for assembling the whole shebang.
Dr. Seuss Cupcake Ingredients
- 1 box of vanilla cake mix
- 3 eggs
- 1/2 C (1 stick) of softened unsalted sweet cream butter
- 1 C whole milk
- 1TBSP pure vanilla bean paste
- cupcake liners
- cupcake pan
Homemade Frosting Ingredients
- 1C (2 sticks) unsalted sweet cream butter, softened
- 2 1/2 C powdered sugar
- 1 tsp vanilla
- 3-5 TBSP heavy whipping cream
- Sky Blue gel food coloring
- 1 disposable piping bag fitted with a star tip
Chocolate Covered Oreo Ingredients
- 1 package of Double Stuff Oreo cookies {you only need 24}
- 1 bag of Ghirardelli White chocolate melting wafers
- 1 cookie sheet fitted with parchment paper or a silicone mat
Red Striped Marshmallow Ingredients
- 1 bag of regular-sized marshmallows
- 1 bag of red candy melts
- 2-3 TBSP coconut oil
Directions for Cupcakes
Preheat oven to 350 and line cupcake pan with the liners.
In a stand mixer, combine the cake mix, butter, milk, and vanilla bean paste and mix until combined.
Using a medium ice cream scoop, scoop the batter into the cupcake liners and fill about 3/4 of the way full.
Bake in the oven for about 21 minutes.
Remove from oven and set aside to cool.
Frosting Directions
Using a stand mixer, combine all ingredients except the food coloring into the bowl and mix on medium speed.
If your frosting starts looking like powdery rocks, add another tablespoon of heavy whipping cream.
Mix until you see creamy stiff peaks.
Add a few drops of the blue gel coloring.
Mix until combined.
Scoop some frosting into the piping bag and pipe onto cooled cupcakes.
Oreo Instructions
Using a double boiler or the microwave, melt the white chocolate.
Drop cookie into melted candy and turn to coat completely. Remove cookie from candy with candy dipping scoop, tapping gently against the side of the bowl, allowing excess chocolate to return to the bowl. If air bubbles form, pop them with a toothpick.
Place OREO onto cookie sheet and repeat steps for remaining OREO cookies.
Set aside to completely harden.
If you used a double boiler for this step, you'll need to wash it out completely so you can use it again for your marshmallows. 🙂

Marshmallow Instructions
Using the double boiler or microwave, melt half of the red candy melts.
Once melted, mix in half of the coconut oil. This will thin out the candy melts.
Take a marshmallow and dip 1/4 of the top into the candy melts.
Carefully shake off excess candy melt and place onto the cookie sheet.
Repeat steps with remaining marshmallows.
Once the marshmallows have been dipped, turn down the heat and let the red candy melt on the marshmallows harden
Once they have hardened, heat the rest of the red candy melts and add the coconut oil.
Now peel the hardened marshmallows off of the cookie sheet.
Flip the marshmallow over and dip 1/4 of the bottom side into the chocolate. You want the marshmallow to look like the Cat in the Hat.
Place the melted part onto the middle of the OREO and allow it to harden on the OREO. This will make it look more like a hat. 🙂
Once chocolate is hard, carefully remove the OREO/Marshmallow combo from the cookie sheet and place onto the cupcake.
