I'm slightly obsessed with cheese and I have been on a quest to find the best white queso dip recipe. It is a very rare day that I don't have some kind of cheese or that I don't add cheese to whatever it is that I'm making. And while I love most cheese equally, I have a very special place in my heart for queso dip…especially the creamy white kind. I don't even need the chips…just give me a big bowl of queso blanco to eat with a spoon. 🙂 Unfortunately, it's not in my budget to go to my favorite Mexican restaurant daily for a hit of queso, so I had to do with all frugal people do…I had to learn to make my own. After a whole lot of trial and error, I'm thrilled to share a recipe that is uber fabulous and the best part is it can be made in your crockpot.
If you have some in your family who don't like spicy foods, you can reduce the amount of jalapeños and/or green chilies. I have two in my family who like it super spicy, two who like it super mild and two who prefer it somewhere in the middle. I end up having to serve it with a bowl of jalapeños so people can amp up the spice on their own. The recipe I'm sharing has what I consider to be the perfect amount of kick!
White Queso Dip Recipe Ingredients:
- 1 block regular cream cheese, cut into 1/2 inch cubes (8 oz.)
- 1 pound white american cheese, cut into 1/2 inch cubes (I got this in the deli)
- 1 Tablespoon salted butter
- 1 (4 ounce) can diced green chilies (you can choose how hot you want them)
- 1/2 Tablespoon jalepenos, chopped fine (optional)
- 3-4 Tablespoons milk
- 2 Tablespoons cilantro, chopped fine (optional)
White Queso Dip Recipe Instructions:
- In a greased crockpot combine cream cheese, american cheese, butter, green chiles and jalapeños.
- Cover and cook on low heat for 1 hour. Stir the mixture until well mixed, then add a tablespoon of milk at a time until you reach the desired consistency.
- Cook for another 15-20 minutes, or until the cheese is completely melted and combined.
- Keep cheese dip in crock pot on the warm setting until ready to serve.

A Few of My Kitchen Faves
I love to share some of my kitchen faves…especially when I'm sharing a recipe that uses some of my kitchen faves. In this case, since we're talking about Crock Pots, I thought I'd share the ones that regularly get used at our house!
Slow Cooker – I have 3 slow cookers that I love. One is a standard crockpot and the other 2 are multi-purpose.
- Crock Pot – I love this Programmable Slow Cooker and it works great with Slow Cooker liners which are essential for messy meals.
- Instant Pot – We regularly use our Instant Pot to make bone broth so if it's still sitting on the counter, I'll use the slow cooker feature on it instead of reaching for my regular Crock Pot.
- Ninja Multi/Slow Cooker – If I make anything where I need to brown beef, the Ninja is my go-to. I'll use the slow cooker feature on it for recipes that include browning beef so I don't need to make multiple pans dirty. And just like above, if this is sitting on the counter when I go to make a Crock Pot Recipe, I'll choose this rather than digging my Crock Pot out of a cupboard.
Easy Cheesy Crockpot Queso Dip
