Preheat the oven to 325.
Spray a loaf pan with baker's spray and then line with parchment paper (for easy release). Spray the parchment with nonstick as well and set it aside.
Combine flour, baking soda, salt, and cinnamon in a bowl. Whisk all these dry ingredients together.
In a large bowl add in the egg, sugar, and vegetable oil. Whisk together.

Take the dry ingredients and add them to the bowl with the wet ingredients or you can add both bowls of ingredients into a large separate bowl. Use a rubber spatula to mix the wet and dry ingredients together. Don't worry if it feels dry and course at this point.

Mash the bananas and add them to the bowl.

Add buttermilk (if you don't have buttermilk, check out the FAQ for other options), vanilla, and 1/2 cup chopped walnuts. Mix well. Make sure to scrape the bottom of the bowl.

Once everything is well incorporated (make sure all of the dry mixture is fully mixed in), pour batter into the prepared pan. Top with 1/4 cup walnuts.

Bake for 75 mins. You'll want to begin checking your bread after 55 minutes as ovens vary and you don't want to overcook this.

Once your banana bread is fully baked, allow it to sit for at least 5-10 minutes before cutting. Serve it warm with a hot cup of coffee or a cold cup of milk…because it doesn't get much better than thick slices of warm banana bread served with your morning beverage of choice.
FAQ’s about Copycat Starbucks Banana Bread
Do I have to use walnuts?
No. You can use pecans instead. Or you can make this nut-free if you prefer. You do you!
I don't have buttermilk? Can I use something else instead?
Yep. You sure can. You can make buttermilk by adding 2 teaspoons of lemon juice to a measuring cup. Then add milk until you hit the 1/2 cup mark. Stir it up and then let it sit for a few minutes. Worse case scenario…you can just add whole milk. It will change the flavor slightly, but not too dramatically.
What else can I add to this banana bread?
I know some people like chocolate chips in their banana bread. While this is not my personal favorite, my family likes it. You'll want to add 1/2 cup to 1 cup of mini chocolate chips.
How long will this banana bread stay fresh?
This banana bread won't stay fresh quite as long as Starbuck's banana bread since they add soy lecithin to theirs to increase the shelf life. It will stay fresh for 2-3 days if you store in an airtight container. You can also freeze it
Store in an airtight container for 2-3 days or refrigerator for 5-6 days. It will keep in the freezer for 3 months if you wrap it in plastic wrap first and then aluminum foil so it doesn't dry out! Make sure your banana bread is room temperature before wrapping and freezing.
