Do you like easy but healthy dishes? Oh, me too, so that is why the Vegetable Frittata dish is one of my favorite recipes to make for my family. Who doesn't like eggs, cheese, and vegetables all combined together in a yummy meal?

I don't know about you, but I waste a lot of veggies. I buy them thinking we'll eat them, but they go bad. It's the MOM in me; trying to get my family to eat vegetables on a daily basis is a struggle.
Then I found the best frittata recipe that called for vegetables you like or had on hand. Problem solved! When I had veggies about ready to go bad, I use this simple recipe and whip me up a Vegetable Frittata or a Veggie/Bacon/Everything But The Kitchen Sink frittata.
We all know that vegetables are a decent source of vitamins, minerals, and antioxidants that may help to lower cancer risk and cholesterol levels.
As a mother, I'm always encouraging my children to eat healthier for this reason. I'm concerned about their long-term health. My kids may disagree with my logic now, but they will thank me in the future.

I enjoy making frittatas ahead of time too because they're great for sharing and make excellent brunch dishes, as they may be eaten hot, warm, or cold. Frittatas are also great served cold at picnics or BBQs because they keep well in the fridge.
You can serve a frittata with toast for a healthy breakfast, as part of an appetizer platter, or as an entrée at lunchtime. Heck, I've even added it to my healthy dinners list and I serve it with a side salad.

A frittata is a savory, egg-based dish made with eggs, vegetables, cheese, and occasionally meat. A frittata is prepared on the stove top and subsequently baked in the oven until the eggs are firm. It's pretty much like a baked omelet or a crustless quiche.

Is a Vegetable Frittata hard to make?
This easy vegetable frittata recipe is one of the most versatile and nutritious recipes out there. Vegetables provide a lot of flavor, nutrients, and filling ingredients for this dish.
Frittatas are easy to make and can be cooked up quickly, so it's perfect for those nights when you want to throw something healthy together quickly but don't have much time on your hands!
Vegetable Frittata Ingredients (6 servings)

- 1/4 cup red onion, diced
- 1/4 cup red bell pepper, diced
- 1/4 cup green bell pepper, diced
- 1/4 cup mushrooms, diced
- 2 tbsp olive oil + 2 tbsp unsalted butter
- Six large eggs
- 1/2 cup heavy cream
- 1 tsp kosher salt
- 1 tsp black pepper
- 1/2 tsp oregano
- 1 cup shredded cheese (Triple cheese blend)
- 4 strips of pre-cooked bacon, diced (Optional)
How to make a Vegetable Frittata
The first step is to preheat the oven to 350. Then dice all veggies and heat olive oil and butter over medium heat.

Add your red onions, bell peppers and mushrooms and sauté until soft. Then go ahead and set aside.
After that, add eggs, cream, salt, pepper, and oregano to a medium bowl. Whisk it to combine eggs with the other ingredients.

Time to add in the sauteed vegetables and cheese.

Make sure you give it a good stir to combine everything.

If you are using a baking dish like I did this time then spray the baking dish with nonstick spray.
Then go ahead and add the egg mixture and bake uncovered for 30 mins or until the top is golden and bubbly.

If you are like me and love some cheese then please top your frittata with more cheese. Yummy!
Add extra cheese at the 30 min mark if you'd like, and bake for five more mins.

Can I add meat to the Frittata?
Heck yes, you can. I highly recommend adding bacon because it takes this Vegetable Frittata to the next level, but you can use any meat you want. So when you are adding your two cups of vegetables and cheese, add in 4 strips of pre-cooked bacon, diced.
What are some other Veggies I can put in the Frittata?
Gosh, just about any vegetable possible, but here are a few more to consider when creating your dish:
- Potatoes
- Sweet potatoes
- Spinach
- Kale
- Asparagus
- Peas
- Corn
- Broccoli florets
- Cauliflower florets
- Tomatoes
- Green Onions
I'm sure the list can go on and on but make sure that the amount of veggies you put in is only two cups worth. Also, if put in raw veggies, you'll have too much moisture in the dish and the Frittata will get soggy, so make sure to use cooked vegetables. No one likes a wet egg dish.

Like I mentioned above, bacon is always a great thing, but here are some more add-ins to think about:

- Parmesan cheese
- Goat cheese

- Cream cheese
- Shredded Chicken
- Ham
- Cilantro
- Fresh Basil

In a nutshell, anything in your fridge that goes with eggs is fair game. This is a great way to use up random stuff like leftover veggies in your fridge.
In addition, frittatas are simple to create with whatever you have on hand since they may be personalized and varied to your liking using add-ins.

Do I have to use heavy cream?
While I think that the heavy cream will give you a more fluffy frittata, you could use whole milk if you needed to.
What is the best pan to use to cook the vegetables?
I personally think a cast-iron skillet is the best choice to sauté the veggies, but any ovenproof skillet will work for the entire recipe. If you want those triangle cut frittata pieces, then cook everything in the skillet.
I don't know why, but my husband is NOT a fan of using a cast iron pan. He recommends cooking veggies in a ceramic skillet.
How long can I keep the Frittata in the Fridge?
This is a beautiful dish to prepare ahead of time! It may be kept in the fridge for three days if stored in an airtight container. The Frittata may also be frozen for up to three months. I wouldn't recommend microwaving it because that would make it soggy.
How do I reheat the Vegetable Frittata?
The best way to reheat this dish is by baking it in the oven at 350°F until heated through, which should take about 20 minutes depending on how hot your oven runs. If you have a pre-heated oven, then it should only take about 15 minutes. I wouldn't recommend microwaving it because that would make it soggy.
