Our family eats the same thing for breakfast every single weekday! We eat eggs and green smoothies. The only real variation is what we put in the smoothies.
I've been looking for a quick, easy and fun recipe to make on weekend morning and after a few tries, I think I hit the ball out of the park with these Gluten Free Coffee Cake Muffins.
These were super easy since I used Aldi's Live G Free Baking Mix. {If you haven't tried Aldi's Gluten Free line of products, you're seriously missing out. They are seriously delicious and affordable.} To make this recipe even easier, I used my Babycakes Cupcake Maker and these muffins only took 6 minutes to bake. If you don't have a cupcake maker, you could use a muffin pan and bake them in your oven at 350 degrees.
Ingredients
For the muffins:
2 1/2 cups Live G Free Baking Mix (or other Gluten Free Baking Mix)
1/2 cup butter softened
1/4 cup butter melted
1 large egg
1/8 cup brown sugar
For the topping:
1/2 cup butter melted
3 Tablespoons brown sugar
1 teaspoon cinnamon (You can use more, but some people in my family aren't big cinnamon fans)
Directions:
1. Mix all muffin ingredients in a mixing bowl until soft dough forms. (I used my KitchenAid, but you could mix it by hand as well).
2. In a separate bowl, mix your topping ingredients together.
3. Spray your cupcake maker with cooking spray.
4. Place spoonfuls of dough in your cupcake maker and then make a small indentation in the top for your topping.
5. Add a spoonful of topping mixture into the indentation you made.
6. Let your muffins cook for 6 minutes. They will be a golden brown color when they're finished. {I know they're not the most beautiful muffins, but what they lack in looks, they make up for in taste and convenience.}
7. Let cool slightly and then enjoy with a big glass of milk!

Easy Gluten Free Coffee Cake Muffins
