When I made the decision to try a gluten-free lifestyle, I figured I’d hate it and it wouldn’t help with my lupus! Imagine my surprise when I started feeling not just a little better…but a lot better! One of the things I worried most about when I started eating gluten-free was not being able to eat desserts or find quick and easy convenience products. Don’t get me wrong. I’m not opposed to being creative in the kitchen or baking from scratch, but with 4 kids and a busy schedule, there are times that I want to be able to grab a box and whip something up without worrying about whether I have all the ingredients I need. Thankfully, my good friend Betty Crocker didn’t disappoint me. Betty Crocker has a whole line of gluten-free products and they’ve just added Sugar Cookies and a Rice Flour Blend to the mix. We’ve made cookies, cake, and my favorite…brownies! And if they’re baking mixes weren’t enough, my favorite Betty Crocker Frosting Flavor (Rainbow Chip) is also gluten free and is absolutely fabulous on brownies, cupcakes, and cookies. Ok…who am I kidding? It’s possible I’ve been known to eat it right out of the container. 🙂
